Taco Salad

Ingredients
- 2.5 oz (70 g) cooked extra-lean ground beef
- 1 tsp chili powder
- ½ tsp ground cumin
- ½ cup cooked brown rice
- 4 lettuce leaves, chopped
- 1 medium tomato, chopped
- 2 tbsp fresh cilantro, chopped
- ½ cup frozen corn kernels, thawed
- 1 medium green onion, chopped
- 2 tbsp low fat cheddar cheese, shredded
- 2 tbsp plain 2% Greek yogurt
- 1 tbsp (15 mL) lime juice
Directions
- Mix ground beef, chili powder and cumin together.
- Add the rice to serving dish, top with lettuce.
- Sprinkle on seasoned ground beef, tomato, cilantro, corn, green onion, and cheese.
- Top with Greek yogurt and lime juice.
