Salmon and Ricotta Toast

Whole wheat toast with salmon, ricotta, and fresh tomatoes.

Ingredients

  • 1 slice whole wheat bread, toasted
  • 3 oz (85 g) canned no sodium added salmon with bones and skin, drained
  • 1 tbsp (15 mL) lemon juice
  • 2 tbsp low fat ricotta cheese
  • ½ medium tomato, sliced
  • ⅛ tsp black pepper

Directions

  • Break salmon into flakes and combine with lemon juice.
  • Spread ricotta on toast and top with salmon mixture and sliced tomato.
  • Sprinkle with black pepper.
