Salmon and Ricotta Toast

Ingredients
- 1 slice whole wheat bread, toasted
- 3 oz (85 g) canned no sodium added salmon with bones and skin, drained
- 1 tbsp (15 mL) lemon juice
- 2 tbsp low fat ricotta cheese
- ½ medium tomato, sliced
- ⅛ tsp black pepper
Directions
- Break salmon into flakes and combine with lemon juice.
- Spread ricotta on toast and top with salmon mixture and sliced tomato.
- Sprinkle with black pepper.
