Breakfast Hash

Serves: 2
Ingredients
- 2 cups (300 g) Jerusalem artichokes, chopped
- 2 cups (300 g) russet potatoes, chopped
- 1 ½ Tbsp (23 mL) olive oil
- ½ cup (75 g) onion, chopped
- 1 tsp (2 g) salt
- ½ tsp (1 g) black pepper
Directions
- Preheat oven to 400ºF.
- Add all ingredients to a baking dish or casserole dish and stir well.
- Bake for ~20 minutes. Remove from oven and stir well to ensure even baking.
- Return to oven and bake for additional ~20 minutes, until potatoes are golden brown.
